Chocolate Sandwich Cookies

I love to bake.  And I love to eat baked goods.  This is not always a good combination, but I will always be the first to sign up to bring dessert to any event.  This weekend I had to make LOTS of cookies for my son's swim meet and knew this was the perfect frugal recipe for the event.  (Note:  I did triple to recipe, you should get at least 15 cookie sandwiches from a single recipe).  Since I paid very little for the ingredients and these are super easy to make, it was a no-brainer.  I found this recipe on Allrecipes.com (which happens to be one of my favorite sites on the internet) and just tweaked it a little to make it even easier than the original.  


Chocolate Sandwich Cookies


2 - 18.25oz. boxes of chocolate cake mix
4 eggs
2/3 c. vegetable oil


1 container chocolate icing



  1. Preheat oven to 325 degrees F.  Lightly grease cookie sheets.
  2. In a medium bowl, stir together the chocolate cake mix, eggs and oil.  Mix until well blended.
  3. You can roll the dough into balls, but I like to use my ice cream scooper.  Then flatten the balls slightly.
  4. Bake for 10 to 12 minutes.  Let cool on the baking sheet for a few minutes before removing to cool on wire racks.
  5. Once cooled, spread a dollop to icing onto the inside of one cookie, then top with the other to make a sandwich.  You can always use a different flavor of icing, if you think this might be chocolate overload, but for the chocolate lovers in the group, these will satisfy any craving.  Enjoy!

Chocolate Chip Banana Bread

Wow, I can't believe how long it has been since I've been on-line.  We are just wrapping up a large home remodeling project and I haven't had time to make any involved dinners, let alone tell you about how pathetically unoriginal it has been around here at mealtime.  Thank goodness for a family who is willing to eat frozen pizzas and cereal for dinner!


Ok, so now for the good stuff.  Have you ever gone into the grocery store only to find bags of bananas (organic, no less) at $.29/lb.?  My children are like little monkeys in their love for this yellow fruit, so when I seen them at that price I scarf them up.  Unfortunately, there are times when I go a little overboard and get even more than my little monkeys are willing to consume (before they turn too brown and are really unwilling to consume).


I love this recipe when I have an over-abundance of bananas.  So many banana bread recipes call for 2-3 bananas, which is fine, but I am usually making banana bread out of desperation (not enough room in my freezer for bananas that will soon be collecting fruit flies if nothing is done with them).  This recipe allows you to get rid of 7-8 bananas and is the moistest bread I have ever had.


Chocolate Chip Banana Bread  


2 1/2 c. flour
1/2 t. salt
1 1/2 t. baking soda
1 1/2 c. packed brown sugar
1 1/2 sticks of butter
2 large eggs
7-8 medium ripe bananas
1 t. pure vanilla extract
1 c. semi-sweet chocolate chips



  1. Preheat oven to 325 degrees F.  Grease 2 9x5 loaf pans - you can also make 4 mini loaves instead.
  2. In a large bowl cream butter and sugar with an electric mixer (this is where my favorite kitchen appliance comes in - the Kitchen Aid stand mixer - I love to be able to do 2 things at once!).  Add eggs, bananas and vanilla and beat at medium speed until thick, making sure to scrape down the sides from time to time.
  3. Add flour, salt and baking soda.  Once that is blended (don't overmix) add chocolate chips and mix just until chips are throughout batter.
  4. Pour batter into prepared pans. Bake on center rack of oven for 60 - 70 minutes (probably less for the mini loaves, so keep an eye on them).  Make sure when you insert a toothpick that it comes out clean.  The bread should be pulling away from the sides of the pan.
  5. Cool in pan for about 10 minutes.  Run a knife around the edge of the bread, just to make sure nothing is sticking, then take bread out of pan.  Let cool to room temperature before cutting.  If you can't wait to taste it, it will still be delicious, but just may fall apart!

Enchiladas de Res Malido

In keeping with the Cinqo de Mayo theme that the grocery stores are targeting this week, I dug out an old recipe that I remember having as a child.   I was able to use some of the dozens of tortillas and bags of cheese that have been super cheap/free during triples.   I will admit that I didn't have any ground beef and had gotten an awesome deal on some ground organic chicken, so I decided to improvise, but this recipe will the original.  


Enchiladas de Res Malido


Sauce
4 c. beef broth
2 T. chili powder
1/4 t. garlic salt
1 t. cumin
2 T. cornstarch mixed with 1 T. water


1.  Bring first 4 ingredients to a boil and then add the cornstarch to thicken.  Simmer until thickened slightly.


Filling
1 onion, chopped
1 clove garlic, minced
1 lb. ground beef
1 small can ripe olives, chopped
1 small can corn
1 c. diced tomatoes, drained
1/2 c. of the above sauce


2 c. shredded cheddar cheese, divided
torillas


2.  Brown beef, onion and garlic.  Drain excess fat.  Add remaining filling ingredients.  Cook down so that much of the liquid evaporates.  Just before filling the tortillas, add 1 c. cheese. 


3.  In 9 x 13 pan put a small amount of the sauce to cover the bottom of the pan.  Fill tortillas and roll.  Place side by side - you will need to squish them together.  Pour remaining sauce over the entire casserole (tortillas may dry out if they don't have sauce on them, so make sure you get a little sauce on each enchilada).  Sprinkle top of casserole with remaining cup of cheese.  Bake at 350 degrees F. for 20-25 minutes.

Pizza Casserole

I'm finally getting around to using my No Yolks egg noodles.  I have gotten so many of these free over the past several triple coupon weeks, that my pantry is bursting with bags.  I have to admit, I usually use these coupons last because I'm never sure what to do with the noodles.  But this crowd-pleasing casserole was a big hit.  This was brought to a pot-luck, so the recipe makes a large pan (10x15).  


Pizza Casserole


4 cups uncooked egg noodles
1 lb lean ground beef
2 onions, chopped
4 cloves garlic, minced
1 c. sliced pepperoni
1 24oz. jar pasta sauce
3 cans diced tomatoes
1/2 c. water
4 T. milk
4 c. shredded mozzarella cheese


1. Preheat oven to 350 degrees F.
2.  In a large pot over medium heat, brown the ground beef with the onion and garlic.  Drain excess fat.  
3.  Stir in the remaining ingredients - with the exception of the cheese.  Cover and simmer for 15 minutes, or until noodles are softened.  Stir occasionally.
4.  In large casserole dish spoon half of the noodle mixture into the bottom.  Sprinkle with 2c. cheese.  Spoon remaining noodle mixture on top of the cheese, then top with 2c. cheese.
5.  Bake covered at 350 degrees for 20 minutes, then uncover and bake for 10 minutes.  Enjoy!

Breakfast Burritos Aren't Just for Breafast


This week at Harris Teeter just screams breakfast burritos.  If this meal cost me any more than $1.50 I would be very surprised.  You can't even get one fast food kid's meal for that, let alone feed a family of 4.  The great thing about breakfast burritos is that you can stuff those little tortillas with just about anything you want.  I was in a hurry, so my creative juices weren't really flowing, but the possibilites are nearly endless.

I read somewhere that the perfect ratio of milk to eggs for scrambled eggs is 1T. milk and dash of salt to 1 egg.  So, that's what I did.  Then on top of a warmed tortilla, piled eggs, cheese, salsa and sour cream (with a little mexican dip mix stirred in).  Rolled them up and topped with extra salsa and sour cream, and voila, you've got yourself a meal.  The next time I make these, I will definitely add some black beans, for a bit more color and added "depth" (if that is a cooking term) of flavor.  Enjoy!

Crunchy Flaky Chicken

In my never-ending quest to use the sour cream in my refrigerator, I have continued to search for other good grocery deals that I can pair with this creamy goodness.  I hope you were able to take advantage of the past chicken deal at Harris Teeter, but if not, short-dated chicken is always a great alternative.  Check with the folks in the meat area at your store and find out when they do their markdowns for the day.  The chicken used for this recipe I got for $.57 per pound - you can't beat that.  I may have spent a total of $8 for all of the ingredients for this entree and have been able to get several meals out of it for my family of four.  Okay so let's get to it...


Crunchy Flaky Chicken


6 skinless, boneless chicken breasts (3.5 - 4 lbs.)
2 c. sour cream
1 packet dry ranch dressing mix
8 oz. crushed Corn Flakes cereal
1 t. Italian-style (I used Pampered Chef, but there are lots of others out there)
1/2 t. garlic salt
1/2 t. onion salt




1.  Preheat oven to 350 degrees F.


2.  Combine ranch dressing mix with sour cream, set aside.




3.  Rinse and trim off the excess fat from the chicken, then cut into strips (about 1 inch wide).  Dry off any water that may be remaining on chicken.




4. Coat chicken strips in sour cream mixture, making sure all sides are covered and place on tray.  Refrigerate for 2 hours to set up sour cream for easier dredging in corn flakes.





5.  Put corn flakes in a ziploc bag and crush into very small flakes.  (You will get a better result if you don't crush them in the food processor.  They get a little too fine, and in turn, are not quite as crisp after baking).  In bowl, mix corn flakes, Italian seasoning, garlic salt and onion salt.



6.  Dredge refrigerated chicken in corn flake mixture and place on lightly greased jelly roll pan (we actually needed two pans, but that will depend on how thick you cut the chicken strips).




7.  Bake in preheated oven for 30 minutes, or until chicken is no longer pink in the middle.  (Again, this will depend on how thick you cut your strips - for very thin strips, reduce cooking time, and thicker strips may require more time.










You can dip these in your favorite sauce for a yummy dinner.  This recipe was a huge hit even with my INCREDIBLY picky daughter.   Enjoy!
